What is Cigköfte?

Cigköfte (Turkish Çiğ Köfte) is a spicy mixture of bulgur, tomato and pepper paste, onions, garlic and isot chili. Today it is usually made without meat and eaten cold. Yayla's Cigköfte is vegan and comes chilled in the pack.

The right Cigköfte for the wrap

The easiest way to make the wrap is with the Cigköfte Wrap 180 g: the pack contains the bulgur specialty, flatbread and Çiğköfte sauce. Yayla offers Cigköfte in several varieties, each in a classic and a spicy version: the wrap as Cigköfte Wrap and Cigköfte Wrap spicy, plus the Cigköfte 380 g and the Cigköfte spicy 380 g. If you like it hotter, go for the spicy varieties.

Would you like to fill your own flatbread? Then use the Cigköfte without wrap: the Cigköfte 380 g or the Cigköfte spicy 380 g. They also go well with Yayla's wheat flatbreads (Tandır Lavaş), which you warm briefly and fill as in the recipe.

Your Cigköfte wrap turns out well with these tips

  • Dry the lettuce well so the flatbread does not turn soggy.
  • Spread the Çiğköfte sauce thinly on the flatbread so the wrap stays easy to hold.
  • Place the filling only on the lower third and fold in the sides, then the wrap can be rolled up tightly.
  • Lemon juice and parsley make the wrap taste especially fresh.
