Hot Pepper Paste 370 g – Acı Biber Salçası for Turkish dishes

Yayla's hot pepper paste (Acı Biber Salçası) is a rich pepper paste in the Turkish style. It is made from hot red peppers, salt and the preservative potassium sorbate, and comes in a 370 g jar. It adds colour and heat to soups, sauces and marinades.

What is pepper paste (Biber Salçası)?

Biber salçası is a concentrated paste made from peppers that serves as the base for many dishes in Turkish cuisine. It gives stews, meat dishes and vegetable pan dishes an intense colour and a rounded flavour.

Using pepper paste: ideas for the kitchen

  • Soups and stews: fry a tablespoon in oil and top up with stock.
  • Marinades: with olive oil, garlic and spices for chicken, lamb or vegetables.
  • Minced meat dishes: for our Adana Kebap, it provides the typical heat.
  • Breakfast: stirred with olive oil as a dip for bread.

Pepper paste works best with these tips

  • Fry the paste briefly in hot oil, and it releases its full flavour.
  • For salty dishes, add the paste first and season afterwards.
  • Mild and hot can be mixed to adjust the heat to your own taste.

Frequently asked questions about pepper paste

Pepper paste (Turkish Biber Salçası) is a concentrated paste made from red peppers. It gives dishes colour, seasoning and a fruity depth. In Turkish cuisine it goes into soups, stews, sauces and marinades.

The mild pepper paste is made from red peppers, the hot one from hot red peppers. Both have the same consistency and can be swapped 1:1, depending on how hot you want the dish to be.

Pepper paste tastes different from tomato purée: fruity and pepper-like rather than tart. It can complement tomato purée, but it is not an exact substitute.

The hot pepper paste in the 370 g jar keeps for at least 730 days unopened at room temperature. Storage instructions after opening are on the label.

Pepper paste contains 5 g salt per 100 g. When seasoning, therefore, add the paste first and only then adjust with salt.
