Vegetable Bulgur Pan

Quick bulgur skillet with fresh vegetables and creamy yogurt topping
Ingredients
| 1 cup | Yayla bulgur |
| 1 tbsp | Yayla butter |
| 3-4 tbsp | yalya premium yogurt |
| 2 tbsp | olive oil |
| 1 | small eggplant |
| 1 | onion |
| 1 | green pepper |
| 1 | small carrot |
| 1 | tomato |
| 1 tbsp | tomato paste |
| - | salt,pepper |
| - | Fresh dill |
| 2 cups | boiling water |
Preparation

Dice all vegetables. Heat olive oil and butter, sauté onion and carrot first.

Add pepper, eggplant and tomato. Stir in tomato paste and cook briefly. Add bulgur and toast lightly.

Pour in hot water, season and simmer 10–15 minutes. Let rest shortly and serve with yogurt and dill.
