Pumpkin Soup

Autumnal delight: Hokkaido pumpkin soup!
Ingredients
| 1 | hokkaido-pumpkin |
| 2 | carrots |
| 5 | small potatos |
| 1 | onion |
| 2 tbsp | butter |
| 1/2 | vegetable broth |
| 100 g | cream |
| sth. | salt |
Preparation

Cut the Hokkaido pumpkin into wedges, peel it and remove the seeds. Dice the pumpkin into small pieces.

Peel the carrots, onions and potatoes and cut them into small pieces.

Heat the butter in a pan and sauté the diced onion in it. Then add the pumpkin, carrots and potatoes and sauté them too.

Add the vegetable stock and bring everything to the boil. Then reduce the heat and let the soup simmer for about 20-30 minutes.

Use a hand blender to puree the soup. Add the cream and season with salt. You can add a little more salt if necessary.
