Lentil Salad

Ingredients
| 200 g | green lentils |
| 500 ml | water |
| 1 small bowl | diced tomatoes |
| 1 small bowl | chopped spring onions |
| 100g | white cheese |
| 2 tbsp | grilled olives |
| 1 tbsp | olive oil |
| 1 tbsp | raspberry balsamic vinegar |
| 1 pinch | salt |
Preparation

Cook the lentils in a pot of water for about 15 minutes until they are soft. Then let them cool and transfer them to a medium-sized bowl.

Add the diced tomatoes and the spring onions.

Cut the feta cheese into small cubes, take the olives out of the jar, and add both to the bowl.

Finally, prepare the dressing by mixing the olive oil with the balsamic vinegar and season it with salt. Drizzle the dressing evenly over the salad, and it’s ready to serve.
