Bulgur Pilaf

Bulgur pilaf with vegetables (pointed pepper and tomato)

Bulgur pilaf is a classic side dish in Central Anatolia. It is prepared like Turkish pilaf rice. You can quickly conjure up a healthy and delicious side dish with vegetables such as onions, tomatoes and peppers. This is traditionally served with yoghurt.

Ingredients

1-2 tbspbutter (or oil)
1 onion onion, finely diced
2 green pointed peppers, finely diced
1 tsp Salça (tomato puree and/or red pepper paste)
1 aromatic beef tomato, skinned and diced
1 glass coarse bulgur wheat
1½ glasses of hot water
1 tsp salt
½ tsp freshly ground pepper
some chives, parsley or tomatoes, finely chopped

Preparation

Melt butter in a coated, shallow pot. Sauté diced onions and peppers slowly until they get a slight color. Add bulgur and toast for a few minutes. Add tomato paste and shortly after, add the diced tomatoes, let it simmer for another 2-3 minutes with occasional stirring.

Pour hot water over the vegetables and season with salt and pepper. Bring to a brief boil and cover, letting it simmer over low heat for about 18-20 minutes until the bulgur is tender. Stir once, adjust seasoning if needed, and let it rest for 5-10 minutes. Garnish with chopped chives, parsley, or tomato cubes, and serve with delicious yogurt.
