Kadayif Pastry Threads 500 g – fresh pastry threads for künefe and more

Yayla Kadayif Pastry Threads (Turkish Taze Kadayıf, also known as angel hair) are fine, pale threads of pastry made from wheat flour. They are suitable for sweet dishes such as künefe as well as for savoury dishes and as a crispy coating. The 500 g pack is enough for our künefe recipe twice, each time with 250 g of pastry threads.

What is Kadayıf?

In Turkish cuisine, kadayıf refers to thin threads of pastry made from a liquid batter. When baked, they turn crisp and golden brown, and with syrup or butter they taste both sweet and juicy. The best-known classic is künefe with melted cheese.

Using Kadayif: ideas for the kitchen

  • Künefe: mix the pastry threads with butter, layer them around cheese, bake, and pour sugar syrup over the top. Our künefe recipe shows step by step how it is done.
  • Sweet dishes: as a crispy base or lid for desserts with syrup or cream.
  • Coating: pulled into small pieces as a coating for cheese or meat.

Kadayif works best with these tips

  • Before using, loosely pull the pastry threads apart and tear them into small pieces.
  • Mix well with melted butter so that all the threads are coated and turn crisp.
  • Press the pastry down firmly when layering so that the layers hold together when served.
  • Store the pastry threads chilled and only open the pack shortly before use.
